In a medium sized mixing bowl, beat the cream cheese until smooth.
Add the lemon extract, sweetener and lemon zest, and continue beating until well mixed.
Add 1 Tbsp of the finely chopped walnuts and 1 Tbsp of the shredded coconut and stir until thoroughly combined.
Form into 1 inch balls
In 2 small separate bowls add the remaining finely chopped walnuts. and the shredded coconut.
Roll the balls in the coconut or walnuts and set them aside.
Chill for at least 2 hours before serving.
Store in refrigerator in an airtight container.
