Ingredients

  • 1/2 cup Butter - Room temperature
  • 1/2 cup Canola Oil
  • 3/4 cup Splenda Granulated Sweetener
  • 4 medium-large Bananas - very ripe
  • 2 large Eggs
  • 1 large Egg white
  • 1/4 cup Yogurt - Plain -Unsweetened
  • 2 tsp Vanilla extract
  • 1 1/2 cups King Arthur Keto Wheat Flour
  • 3/4 cup All-Purpose Flour
  • 1 tsp Baking Soda
  • 3 rsps Baking Powder
  • 1 tsp Salt

Instructions

  • Preheat oven to (175C) 350F.
  • Grease and flour the sides of a 9 by 13 inch baking pan and line the bottom with parchment paper.
  • Sift the King Arthur Keto Wheat flour and the all purpose flour.
  • Add the baking powder, salt and baking soda to the flour mixture and whisk.
  • Using an electric mixer, in a large mixing bowl, cream the butter until smooth.
  • Add the sweetener to the butter and continue mixing.
  • Add the ripe bananas and continue mixing until smooth. (if the bananas are very ripe, they do not need to be mashed before mixing. If the bananas are not very soft, mash them before adding them to the batter mix.)
  • Add the canola oil and continue mixing.
  • Add the eggs followed by the yogurt and vanilla and mix well.
  • Add the flour mixture a scoop at a time and continue mixing until well combined and the batter is smooth.
  • Pour the batter into the prepared baking pan.
  • Bake in the oven for 30 minutes or until a toothpick comes out clean when inserted into the middle of the cake.
  • Allow to cool slightly before cutting.
  • * If icing- allow to cool completely before frosting, to prevent the frosting from melting.
