- 1 1/2 cups fresh cucumber - chopped
- 1 1/2 cup Grape Tomatoes - halved
- 1/4 cup Red Onion - chopped or thinly sliced.
- 1/2 cup Feta Cheese - crumbled
- 1/3 cup Black Olives - sliced or pitted
Dressing
- 1 clove Garlic - minced
- 3 tbsp Red Wine Vinegar
- 1 tsp White Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 1/2 tsp Oregano - dried (or 1 tbsp fresh - chopped)
- 1/2 tsp Dijon Mustard
- Salt and pepper to taste
In a mixing bowl combine all salad ingredients and toss together.
In a separate bowl or dressing bottle combine the dressing ingredients.
Mix the dressing ingredients well and pour over the salad.
Stir the salad enough to the salad with the dressing.
Cover in plastic wrap and chill for at least 1 hour, stirring periodically.
Serve cold.
