Ingredients

  • 1 1/2 cups fresh cucumber - chopped
  • 1 1/2 cup Grape Tomatoes - halved
  • 1/4 cup Red Onion - chopped or thinly sliced.
  • 1/2 cup Feta Cheese - crumbled
  • 1/3 cup Black Olives - sliced or pitted

Dressing

  • 1 clove Garlic - minced
  • 3 tbsp Red Wine Vinegar
  • 1 tsp White Vinegar
  • 1/4 cup Extra Virgin Olive Oil
  • 1/2 tsp Oregano - dried (or 1 tbsp fresh - chopped)
  • 1/2 tsp Dijon Mustard
  • Salt and pepper to taste

Instructions

  • In a mixing bowl combine all salad ingredients and toss together.
  • In a separate bowl or dressing bottle combine the dressing ingredients.
  • Mix the dressing ingredients well and pour over the salad.
  • Stir the salad enough to the salad with the dressing.
  • Cover in plastic wrap and chill for at least 1 hour, stirring periodically.
  • Serve cold.
