Instructions
Preheat oven to (190 C)

Whisk together, the flour, salt and baking powder and set aside.
In a large mixing bowl, cream the butter.
Add the egg followed by the vanilla extract and sweetener and continue mixing.
Add the yogurt and continue mixing until well combined.
Slowly add the dry ingredients, mixing well in between additions.
Stir in 1 cup of chopped strawberries to the batter.
Cream Cheese Filling
In a separate mixing bowl, cream the cream cheese.
Add the sweetener and the Walden Farms Syrup and mix well.
Stir in the 1/4 cup of chopped strawberries.
Crumble Topping
In a mixing bowl, combine the cereal, pecan flour and Walden Farms syrup.
Mix well.
Assemble and bake
Line your muffin trays with paper liners.
Add a scoop of batter mix (approx 2 tbsp) per liner.
Add a spoonful of the cream cheese filling on top of the batter.
Top off each muffin with more of the batter, covering the cream cheese filling.
Add a scoop of crumble topping to the top of each muffin. (dividing between the muffins)
Bake for approximately 25 to 30 minutes
Remove from oven and allow to cool before glazing.
Glaze
In a small bowl, whisk together the sweetener and Walden Farms syrup until you have a creamy thick glaze.
When cooled, drizzle glaze over each muffin.
