  • Preheat oven to 375. °F
  • Lightly grease mini muffin pan (or donut hole pans)and set aside.
  • In a mixing bowl, sift the King Arthur Keto Wheat flour twice.
  • Add the sweetener, salt, cinnamon, apple pie spice and baking powder. Whisk to combine.
  • In a separate large mixing bowl, cream the butter
  • Add the egg, followed by the milk and vanilla extract and mix well.
  • Gradually add the dry ingredients while mixing.
  • Once mixed, stir in the grated apple.
  • Divide between 24 mini muffin tins or donut holes. Each cavity should be about 3/4 full. If using a mini donut pan, use a piping bag to fill the cavities. If using a donut hole pan use a small spoon.
  • Bake in the oven for 12-15 minutes or until golden.
  • Remove from the oven and allow to cool for about 15 minutes.
  • While cooling, mix the isomalt crystals and cinnamon in a small bowl.
  • Brush with Walden Farms syrup and immediately roll them in the cinnamon-isomalt mix.
  • Serve or place on a wire rack to dry.

Notes

A tart apple such as Granny Smith is reccomended.
If the batter seems too wet or dry, add a tablespoon of flour or milk to adjust.
