Preheat oven to 400 °F
Sift Flour, Baking Powder, Baking Soda and salt into a mixing bowl.
Add the grated cheese to the flour mix and toss to evenly distribute the cheese.
Cut cold butter into cubes.
Using a pastry blender, cut the butter into the flour until you have loose crumbs.
Make a well in the center of the crumbs.
Pour the milk into the well.
Mix just until dough sticks together.
Lightly flour countertop or silicone kneading mat.
Lightly knead the dough on the floured surface. (10-12 times)
Roll the dough into 1/2 inch thickness.
Using a biscuit cutter, cut into 10 equal sized rounds
Transfer biscuits to a parchment lined baking sheet.
Bake for 12-15 minutes or until golden.
In a small microwave safe bowl, melt the remaining butter.
Remove from the oven and brush with melted butter.
Serve warm.
