Ingredients

  • 4 Cucumbers (Pickling size - 4 to 5 inches)
  • 4 ounces Cream Cheese (Low fat-softened)
  • 1/3 cup Bacon - Crumbles
  • 1/2 tsp Garlic Salt
  • pinch Salt
  • 1 tbsp Chives

Instructions

  • Wash and remove peel sections (if desired)
  • Using a melon baller, scoop out the seeds or center of the cucumber.
  • Set aside.

Filling

  • In a small mixing bowl, beat the cream cheese until smooth.
  • Add the garlic salt and continue beating.
  • Stir in the parmesan cheese and crumbled bacon and stir until well mixed.
  • Sprinkle salt into the cucumber.
  • Scoop the filling into the cucumbers - dividing between the 8 halves.
  • Sprinkle the filled cucumbers with fresh chopped or sprigs of chives.
  • Chill before serving.
