Ingredients

Cucumbers
(Pickling size - 4 to 5 inches)

ounces
Cream Cheese
(Low fat-softened)

Bacon - Crumbles
1/2
tsp
Garlic Salt
pinch
Salt

Chives
Instructions
Wash and remove peel sections (if desired)
Using a melon baller, scoop out the seeds or center of the cucumber.
Set aside.
Filling
In a small mixing bowl, beat the cream cheese until smooth.
Add the garlic salt and continue beating.
Stir in the parmesan cheese and crumbled bacon and stir until well mixed.
Sprinkle salt into the cucumber.
Scoop the filling into the cucumbers - dividing between the 8 halves.
Sprinkle the filled cucumbers with fresh chopped or sprigs of chives.
Chill before serving.
