Instructions

  • Preheat the oven to 375F (190C)
  • Using a pastry blender, mix the crust ingredients in a small mixing bowl.
  • Grease the sides of an 8 inch springform pan and line with parchment paper.
  • Press the crust into the bottom of the pan.
  • Bake for 10 minutes.

Filling

  • Pout the diced peaches into a large mixing bowl, sprinkle with the lemon juice and stir to coat.
  • Sprinkle the sweetener over the peaches and stir.
  • Sprinkle the KA flour over the mix and stir well, making sure there are no lumps.
  • Sprinkle the gelatin over the mix and stir again, making sure there are no clumps of gelatin.
  • Pour the mixture over the baked crust and spread evenly.

Topping

  • In a blender or food processor, pulse the keto granola for a few seconds to break up the pieces.
  • Pour cereal into a mixing bowl and add oats, and sweetener and stir.
  • Add the Walden Farms Pancake Syrup to the cereal mixture and mix well.
  • Pour the mixture over the peach filling layer, spread it evenly and press it slightly into the peaches.
  • Bake for 40-35 minutes. (You should see the filling bubbling around the edges.
  • Remove from the oven and allow to cool slightly before serving.

Notes

** When using peaches off season, the flavour may not be a peachy as it is during the peach season. Replace the unflavoured gelatin with a packet of Sugar Free Peach Jello. This is agreat way to get the best flavour possible.
If Sugar Free Peach Jello is not avaiable to you, use one tablespoon of sugar free Jordan Skinny Peach Bellini Syrup in the filling.
