Ingredients

Crust

Cheesercake Filling

  • 12 ounces Cream Cheese - Low Fat softened (one and 1/2 block)
  • 1 1/3 cup Sugar Free Cool Whip
  • 1 Tbsp Splenda Liquid Sweetener
  • 1 Pkg Sugar Free Strawberry Jello
  • dash Red Food Colouring (optional)

Instructions

Crust

  • In a food processor or blender, add the cereal and pulse into fine crumbs.
  • Pour crumbs into a mixing bowl.
  • Add the melted butter and sweetener and mix until well combined.
  • Divide evenly between 16 silicone moulds and press into the bottom of each cup.
  • Chill

Cream Cheese Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Add the liquid sweetener and continue mixing.
  • Fold in the cool whip.
  • Divide the mixture in half.
  • To one half of the mixture, add the Sugar Free Jello Powder and mix well.
  • If you want the strawberry layer to be darker red, add a bit of food colouring until you have the desired colour.
  • Divide the strawberry cream cheese mixture between the moulds, carefully spooning it in and smoothing it out with the back of a spoon.
  • Add the cream cheese layer on top of the strawberry layer and smooth out the top.
  • Place in the freezer for 2 hours or until very firm.
  • Remove the moulds from the freezer and push each one out of the mould.
  • Serve.
  • Serve with a drizzle of Walden Farms Sugar Free Strawberry Syrup and a couple of strawberry slices. (Optional)
