Preheat oven to 375°F.
In a medium-sized mixing bowl, lightly beat the egg and egg white, add oil, milk and vanilla and mix well.
Sift the Carbalose Flour into a large mixing bowl.
Add the Splenda, baking powder and salt to the flour.
Slowly add the dry mixture to the liquid mixing on low speed
Once the mixture is thoroughly combined, stir in the drained, mashed peaches. Stir well.
Pour into 12 muffin cups
Bake in the oven for 18 minutes, or until a toothpick comes out clean
