Ingredients

  • 1 large egg
  • 1 large egg white
  • 1/3 cup canola oil
  • 1/4 cup skim milk
  • 1 tsp vanilla extract
  • 1 cup mashed peaches -sugar-free, canned - well drained
  • 1 ¾ cup Carbalose Flour
  • 1/2 cup Splenda
  • 2 tsp baking powder
  • 1/2 tsp salt

Glaze

  • 1/2 cup Splenda
  • 1 tbsp cornstarch
  • 2 tbsp peach juice

Instructions

  • Preheat oven to 375°F.
  • In a medium-sized mixing bowl, lightly beat the egg and egg white, add oil, milk and vanilla and mix well.
  • Sift the Carbalose Flour into a large mixing bowl.
  • Add the Splenda, baking powder and salt to the flour.
  • Slowly add the dry mixture to the liquid mixing on low speed
  • Once the mixture is thoroughly combined, stir in the drained, mashed peaches. Stir well.
  • Pour into 12 muffin cups
  • Bake in the oven for 18 minutes, or until a toothpick comes out clean

Glaze

  • In a small bowl, combine the Splenda, cornstarch, and juice. Mix well until smooth
  • When the muffins are done, cool for about 10 minutes and then drizzle with glaze
