Pour oil into a jar or glass container and place in the freezer for at least 2 hours or refrigerate overnight.
In a small microwave safe mixing bowl or a small saucepan , heat the Jordan's Skinny Syrup until almost boiling.
Add food colouring and gelatin powder, whisking until fully dissolved.
Remove from the heat.
Place the container of oil in a bowl of ice, to keep it cold.
Using a candy dropper, drop single drops of the gelatin mixture into the oil.
Continue until the liquid is gone.
Drain the caviar balls by pouring the oils through a mesh sieve.
Rinse the balls slightly under water and use as decorations or mix into puddings or sugar-free bubble tea.
Save the oil for cooling later for another recipe.
