This easy recipe for Sugar Free Fruit Caviar is not only great for kids at Halloween but can be used to garnish desserts such as cheesecake or homemade sugar-free ice cream.

How to Make Sugar Free Fruit Caviar
Step by Step Instructions
1 – Place a couple of cups of vegetable oil or canola oil in a jar or tall glass in the freezer for 2-4 hours This step is critical for success. The oil will not freeze that quickly but must be very cold for the caviar balls to form.
2 – In a small saucepan, bring the Jordan’s Skinny Syrup and gelatin to a simmer and make sure that all of the gelatin gets dissolved. Add food colouring now if desired. Adding colour produces a more colourful fruit caviar, which always looks better.
3 – Remove from the heat and allow to sit for a couple of minutes.
4 – Using the candy dropper, drop single drops into the cold oil.
5 – Continue dropping juice drops onto the surface of the oil.
5 – Pour the oils through a strainer into a bowl. The caviar balls should all be gathered in the strainer.
6 – Gently rinse the fruit caviar balls under cold water, if using right away.

Pro Tips and FAQs
Keeping the oil cold, when making a large batch.
Place the jar of cold oil in a larger mixing bowl filled with ice. This will help prevent the oil from warming up. Alternatively, have a second jar of cold oil in the fridge and when you start to once the oil not forming balls, switch the jars out.
Using flavoured gelatin in place of the unflavoured gelatin.
You can use sugar-free jello powder, but you will need to adjust the amount of liquid to compensate for the flavouring powder that is also part of the jello powder. I have found this works sometimes and sometimes it doesn’t. Fortunately, it is inexpensive to try it. Start by using one package of sugar-free jello powder with 1/2 cup of water. Don’t forget to add a little food colouring.
Making Boba Tea Pearls.
Substitute the Jordan’s Skinny Syrup with the hot tea or coffee. Follow the same instructions. Don’t forget if you want the boba pearls sweet, you will need to sweeten the tea with your favourite sweetener.
Liquids that make excellent Sugar Free Caviar Balls.
a few ideas that work well with this recipe are:
- Non-carbonated sugar-free drinks
- Juices, such as apple, orange, pomegranate, cherry or grape juice. Avoid juice with pulp.
- Zero Sugar Vitamin water
- Zero Sugar Gatorade and energy drinks
- Water flavoured with water enhancers, such as Mio or Kool-Aid.
- Tea and Coffee – black
For a rich appearance add a few drops of food colouring when making the gel mix.
Storing Instructions
If you are not using the Sugar Free Fruit Caviar that you made or you have leftovers, store them in an airtight container with a little oil, to prevent sticking. They will keep for up to 2 days before they start to dry out.
Sugar Free Fruit Caviar Recipe
Equipment

- 1/2 cup Jordan's Skinny Flavoured Syrup
- 2 tbsp Unflavoured Gelatin (2 – 7 gram pouches)
- 1-2 cups Canola or oil of choice
- Food Colouring (optional)
Instructions
- Pour oil into a jar or glass container and place in the freezer for at least 2 hours or refrigerate overnight.
- In a small microwave safe mixing bowl or a small saucepan , heat the Jordan's Skinny Syrup until almost boiling.
- Add food colouring and gelatin powder, whisking until fully dissolved.
- Remove from the heat.
- Place the container of oil in a bowl of ice, to keep it cold.
- Using a candy dropper, drop single drops of the gelatin mixture into the oil.
- Continue until the liquid is gone.
- Drain the caviar balls by pouring the oils through a mesh sieve.
- Rinse the balls slightly under water and use as decorations or mix into puddings or sugar-free bubble tea.
- Save the oil for cooling later for another recipe.
