How to Make Low Carb Cheesy Biscuits
The Dry Ingredients
Sift the King Arthur Keto Flour, Baking Powder, Baking Soda and salt together in a mixing bowl. Sifting, especially when using low-carb flours.
Add the grated cheese to the flour and toss to mix in the cheese.
Adding Butter
The butter must be cold! Cut it into small cubes and use a pastry cutter to mix it into the flour mix. Cut the butter in until you have a loose crumble.
Wet Ingredients
Make a well in the middle of the flour mix.
Add the milk to the mixture and stir it until the dough sticks together.
Form and bake the biscuits
I recommend using a biscuit cutter to keep the biscuits all the same size. This makes carb counting more manageable.
Sprinkle a silicone baking mat with a little King Arthur Keto Flour.
Roll the dough using a non-stick rolling pin or rub a little flour onto the rolling pin. Use flour sparingly to avoid dry biscuits.
Bake on a parchment-lined baking sheet for 12-15 minutes or until the top is golden.
Remove from the oven and brush with melted butter.

- 1 1/2 Cups King Arthur Keto Wheat Flour
- 3 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 Cup Butter – Cold
- 3/4 Cup Milk
- 1/2 Cup Sharp Cheddar Cheese – Shredded
Instructions
- Preheat oven to 400 °F
- Sift Flour, Baking Powder, Baking Soda and salt into a mixing bowl.
- Add the grated cheese to the flour mix and toss to evenly distribute the cheese.
- Cut cold butter into cubes.
- Using a pastry blender, cut the butter into the flour until you have loose crumbs.
- Make a well in the center of the crumbs.
- Pour the milk into the well.
- Mix just until dough sticks together.
- Lightly flour countertop or silicone kneading mat.
- Lightly knead the dough on the floured surface. (10-12 times)
- Roll the dough into 1/2 inch thickness.
- Using a biscuit cutter, cut into 10 equal sized rounds
- Transfer biscuits to a parchment lined baking sheet.
- Bake for 12-15 minutes or until golden.
- In a small microwave safe bowl, melt the remaining butter.
- Remove from the oven and brush with melted butter.
- Serve warm.

King Arthur Keto Wheat Flour Substitutions
Almond Flour – Almond flour can be used at a 1 to 1 ratio, but alterations may be needed to the liquid ingredients. Using Almond Flour will also affect the final height/rise of the muffins, bread or cake. Almond Flour is finely ground almonds (skins removed) which can also change the overall flavour. Expect a nuttier flavour with a denser texture.
Coconut Flour – Coconut flour can be used as a low-carb replacement. As with almond flour, you will need to alter the liquid ingredients. Coconut flour tends to be absorbent, meaning you may need to add extra liquid to compensate. To maintain the calorie and carb content, adding extra egg or egg whites is a good option. You may lose some of the flavour, due to the coconut flavour. The end bake will also be denser.
Carbalose Flour – This is another excellent substitution for King Arthur Keto Wheat Flour. The ratio is 1-1 with the K.A. Keto Flour. One must-do of Carbalose Flour is that you need to sift it well. Sift it at least once, but twice is better. It is a dense flour and the sifting will help to add some air and lighten it up. You may need to alter the liquid ingredients. Having extra egg whites on hand makes it easy to alter liquids as you go.
All-Purpose Flour – As with most non-low-carb recipes all-purpose flour is the main ingredient. You can easily switch out the King Arthur Keto Flour with All Purpose on a 1-1 ratio. Reduce the amount of baking powder to almost half. You may also need to reduce the liquids. It is a good idea to add the liquid ingredients slowly so that if your batter seems to be getting thin, you can reduce the liquid. The use of all-purpose flour will increase the carbs significantly.

Feel free to add flavourings and spices as desired. Suggestions include
- Onion Powder: 1/2 tsp
- Garlic Powder – 1/2 tsp
- Chili Powder – 1/2 tsp
- Chives – 1 tsp chopped – dried
- Rosemary – 1/2 tsp dried
Making Biscuits without a Biscuit Cutter
Not using a biscuit cutter is not a problem. Form each biscuit into a round ball and then flatten them to about 1/2 to 3/4 inch thick. Keeping them all the same size and thickness makes baking more consistent.
Storing Instructions
