Drain the Pineapple
This is a very important step. The more liquid you get out of the pineapple, the better your sugar-free pineapple coconut bites will be. Stir it while it is in the sieve, to allow all juice to escape. If you don’t remove enough liquid, they will be soggy and wet. if time permits, let the pineapple drain overnight.
The Coconut
We used to find grind unsweetened coconut in this recipe. This gives you the best results. If you are not able to access fine grind, you can always put your coconut in the blender or a grinder for a few seconds. This will give you a finer grind unsweetened coconut. Sweetener Substitutions
I use Splenda granulated whenever possible as it does not negatively impact my blood sugar. I find that sweeteners that contain sugar alcohols cause my blood sugar to rise. Keep in mind that substituting the sweetener may change the overall nutritional information.
Do I Really Need Pineapple Emulsion?
The short answer is no. If you want a little stronger coconut flavour, I recommend the emulsion, It is. great way to add more pineapple flavour without adding more carbs or making the batter too soft. If you prefer not to use it, the sugar free pineapple coconut bites will still taste great, and the pineapple flavour will be a little more subtle.
Should you add food colouring?
I did add a little yellow food colouring, just to brighten them up. It is not necessary to add it if you prefer to leave it out. It adds to the appearance but does not impact the flavour.
The best way to get a uniform ball.
Chilling the dough before rolling will give you the best chance of a smooth round ball. Use a cookie scoop to start and then roll in your hands and once you have a round ball, roll it in the coconut.
Having fine-grind coconut helps to keep the balls round and not jagged looking.
The dough will be cold, but the heat from rolling the ball in your hands will melt the surface enough to make the coconut stick. If you are still having trouble betting the coconut to stick. leave at room temperature for a few. minutes and once softened slightly, gently roll in the coconut.

- 8 ounces Cream Cheese (1 block- room temperature)
- 1/4 cup Unsweetened Crushed Pineapple (well drained)
- 3/4 cup Unsweetened Coconut (fine grind)
- 1/4 tsp LorAnn Pineapple Emulsion
- 1/3 cup Splenda Granulated Sweetener
- 3 drops Yellow Food Colouring (optional)
Instructions
- Drain the pineapple in a sieve until almost dry.
- In a mixing bowl, cream the cream cheese until it is very smooth.
- Beat in the pineapple emulsion
- Beat in the drained pineapple, food colouring and sweetener and continue mixing.
- Fold in half of the coconut and mix well.
- Chill the dough until it is hard enough to scoop.
- Using a cookie scoop, form it into a ball, Roll by hand to make the ball smoother.
- Roll the truffle in the remaining coconut.
- Place on a tray or a baking sheet, that has been lined with wax paper.
- Refrigerate for approximately 2 hours or until very firm.
- Serve cold.
