This low carb meatloaf is amazing! Meatloaf has always been one of those cozy, comforting meals that brings families to the table. Traditional recipes often include breadcrumbs, sugary sauces, or fillers that make it less than ideal for anyone following a low-carb or diabetic-friendly lifestyle. The good news is, you don’t have to give up this hearty classic with this flavorful low carb meatloaf recipe that tastes just as good (if not better) than the original.

Ingredients List
- Ground Beef
- Onion
- Eggs
- Keto Bread 1 gr net carb – see notes)
- Parmesan Cheese
- Sugar Free Ketchup
- Yellow Mustard
- Splenda Granulated Sweetener
- Salt
- pepper
Note – I have included a link to a keto bread available online. It is far less expensive to purchase it in-store. For Canadians, keto bread can be difficult to find. The online store Low Carb Grocery sells sugar-free, low-carb products that can be ordered online. I am not an affiliate, but I have had good luck with them.
Special Equipment
How to Make Low Carb Meatloaf
Preheat oven to 375°F.
Toast 4 slices of the keto bread.
Place the slices of toast in a food processor and pulse into bread crumbs.
In a large mixing bowl, combine the ground beef, chopped onion, eggs, pulsed bread crumbs, parmesan cheese, sugar-free ketchup, prepared mustard, salt and pepper and mix well.
Fill the loaf pan with the ground beef mixture, smoothing out the top.
In a smaller mixing bowl, whisk the sweetener, yellow mustard and sugar-free ketchup together to make the topping sauce.
Spread the topping evenly over the top of the meatloaf.
Bake in the oven for approximately 45 minutes.
Allow the meatloaf to sit for about 10-15 minutes before removing from the pan.
Remove the loaf from the pan and place it on a cutting board. * If it is juicy, place your board in a baking pan to catch the juices.
Slice into 8 equal-sized portions.
** For easy handling of the meatloaf and easy cleanup, line the pan with aluminum foil before making.

- 2 lbs Lean Ground Beef
- 1/2 cup Onions – Finely Chopped
- 2 large Eggs
- 1/3 cup Sugar Free Ketchup
- 2 tsp Prepared Mustard
- 1/2 tsp Salt
- 1/4 t Ground Black Pepper
- 4 slices Keto Bread
- 1/4 cup Parmesan Cheese
Topping
- 1/4 cup Sugar Free Ketchup
- 1 Tbsp Prepared Mustard
- 2 tsp Splenda Granulated Sweetener
- Fresh herbs for garnish (optional)
Instructions
- Preheat oven to 400 °F
- Toast all 4 slices of the keto bread.
- In a food processor, pulse the keto toast into bread crumbs.
- In a large mixing bowl, combine beef, onion, eggs,sugar free ketchup, prepared mustard, parmesan cheese, salt, and pepper and mix well.
- Press into a loaf pan and smooth out the top.
- In a small mixing bowl, combine the sauce ingredients.
- Spread the sauce evenly over the top.
- Bake in oven for approximately 45 minutes.
- Remove the meatloaf from the oven.
- Allow to sit for 10 – 15 minutes before serving.
- Remove the meatloaf from the pan, onto a cutting board.
- Slice into 8 equal portions.
- Serve hot

Beef Substitutions
The beef can be substituted with ground chicken or ground pork. You may want to adjust the salt and add other seasonings to complement the meat of your choice.
Keto Bread Substitution
if you prefer, you can use ground pork rinds. It will change the flavour and be juicier when finished. Using regular bread crumbs is also ok, but will increase the carbs in the recipe.
