It’s something most of us grew up on and often crave. This easy low carb bread recipe gives you all the comfort of traditional bread without the sugar spike.

How to Make Low Carb Bread

Diabetic friendly Low carb Bread Recipe

Makes one, !.5 pound Loaf (650 g)
- 1 cup Water – Room Temperature
- 1 tsp Sea Salt
- 2 tbsp Butter – room temperature – cubed
- 2 tsp Splenda Granulated Sweetener
- 2 1/2 cups King Arthur Keto Wheat Flour
- 1/2 cup Almond Flour
- 1 tbsp Active Dry Yeast
Instructions
- Add ingredients in the order listed in the recipe into thebread maker with the paddle already inserted.
- Select the Whole Wheat program, crust colour and loaf size (1 1/2 pound).
- Press Start.
- Note** when the signal sounds after rising, you can remove the bread dough and knead, reshape and place into a bread pan for the second rise and bake in an oven.
- Once baked, remove the loaf from the bread pan.
- Slice even slices using a bread slicer.

Making this bread without a bread machine
To make this low carb bread without a bread machine, complete the following Steps:
- Sift the flour and salt together twice into a mixing bowl.
- Place a couple of tablespoons of the warm water into a small bowl and sprinkle the yeast over top. Allow 5 to 10 minutes for the yeast to bloom (become foamy). If the yeast does not bloom, you need to replace it because the bread will not rise.
- Mix the warm water, butter, and sweetener in a mixing bowl. You can whisk it or use an electric mixer. If the butter is cold, it will clump. Make sure it is room temperature.
- Add the yeast to the water mix and combine.
- Slowly add the flour, about 1/3 of a cup at a time.
- Once mixed, place the dough on a non-stick silicone mat or floured surface (see notes) and knead for 5-7 minutes.
- Place the dough in a large clean mixing bowl and lightly cover.
- Place it in a warm location and allow it to rise for about an hour. It should double in size.
- Punch the dough to release air from the dough.
- Shape the dough into a loaf and place it in a greased loaf pan or 2 smaller pans.
- Lightly cover with a thin towel or loose plastic wrap and allow a second rise for about another hour.
- Preheat oven to 350°F.
- Bake in a preheated oven for about 45 minutes or until the top is golden brown.
- To check for doneness, tap on the top. You should hear a hollow sound.
- Remove from the oven and cool on a wire baking rack.
Substitutions
King Arthur Keto Wheat Flour Substitutions
Almond Flour – Almond flour can be used at a 1 to 1 ratio, but alterations may be needed to the liquid ingredients. Using Almond Flour will also affect the final height/rise of the muffins, bread or cake. Almond Flour is finely ground almonds (skins removed) which can also change the overall flavour. Expect a nuttier flavour with a denser texture.
Coconut Flour – Coconut flour can be used as a low-carb replacement. As with almond flour, you will need to alter the liquid ingredients. Coconut flour tends to be absorbent, meaning you may need to add extra liquid to compensate. To maintain the calorie and carb content, adding extra egg or egg whites is a good option. You may lose some of the flavour, due to the coconut flavour. The end bake will also be denser.
Carbalose Flour – This is another excellent substitution for King Arthur Keto Wheat Flour. The ratio is 1-1 with the K.A. Keto Flour. One must-do of Carbalose Flour is that you need to sift it well. Sift it at least once, but twice is better. It is a dense flour and the sifting will help to add some air and lighten it up. You may need to alter the liquid ingredients. Having extra egg whites on hand makes it easy to alter liquids as you go.
All-Purpose Flour – As with most regular recipes, all-purpose flour is one of the main ingredients. You can easily switch out the King Arthur Keto Flour with All Purpose on a 1-1 ratio. Reduce the amount of baking powder to almost half. You may also need to reduce the liquids. It is a good idea to add the liquid ingredients slowly, and watch the batter, if it seems to be getting thin, you can reduce the liquid. The use of all-purpose flour will increase the carbs significantly.
Storing Low Carb Bread
If you plan on keeping your bread for a few days, I recommend storing it in the refrigerator and heating it for a few seconds before eating. Alternatively, you can cool it and place it in a bread bag and freeze it. Just take out slices as needed. There are no preservatives or enhancers in this bread, and it will only last a few days at room temperature. If you live in a hot or humid environment, the time it lasts is reduced.
