This easy to Make Sugar Free Pistachio Ice cream doesn’t compromise on taste. Like our other sugar free ice creams, it tastes like the real thing, but without the sugar and carbs.

- Sugar-Free Jello Pistachio Pudding Mix
- Vanilla Extract
- Roasted and Salted Pistachio Nuts

- Cuisinart Ice Cream Maker
- Ice Cream Container for the freezer ( if not serving right away)
How to Make Sugar Free Pistachio Ice Cream
I am using a Cuisinart Pure Indulgence Ice Cream Maker. You can half the ingredients to fit your machine if you have a different brand, such as the Ninja Creami, which has smaller freezer bowls.
1 – Follow the product instructions for freezing the bowl ahead of time. The Cuisinart requires the bowl frozen ahead of time, but the Ninja Creami requires the ingredients frozen ahead of time.
2 -Mix the cold ingredients (except the pistachios). Make sure your ingredients are cold before making the ice cream. If the ingredients are not cold, you will get a buildup around the outside of the freezer bowl.
3 – Assemble the ice cream maker.
4 – Turn the ice cream maker on to start churning.
5 – Pour the cold mixture into the top of the ice cream maker.
6 – After 20 minutes of churning pour in the pistachio nuts.
7 – Scoop and serve for soft ice cream or scoop into an airtight container or place the freezer bowl in the freezer for 20 minutes to harden up a bit for scoopable ice cream.

Sugar Free Pistachio Ice Cream
Ingredients
- 2 cups Heavy Cream – cold
- 1 cup Half and Half Cream – cold
- 1 tsp Vanilla Extract
- 1/2 cup Roasted and Salted Pistachios – chopped
- 1 Pkg Sugar Free Pistachio Pudding Mix
Instructions
- Freeze the freezer bowl according to the manufacturer's instructions.
- Whisk cold cream, cold half and half, Vanilla, and pudding mix together in a bowl.
- Assemble and start the ice cream maker.
- While churning, pour in the cold mixture.
- Churn for approximately 20 minutes and then add the pistachios.
- Churn for another 5 minutes.
- Serve as soft serve or freeze for 20-30 minutes for scoopable ice cream.

Ways to keep Sugar Free Ice Cream Soft.
many people use a teaspoon of Vodka, MCT oil, Xanthan Gum or a little glycerin to lower the freezing point of ice cream. I have found that when I make this recipe the pudding mix does the trick. It is not as soft as store-bought, but leaving it out on the counter for a few minutes will soften it up. If you would like your ice cream a bit softer, you can try one of those ingredients. Only add a small amount, no more than a teaspoon of Vodka, or 1/4 tsp of Xanthan Gum.
Roasting and Salting Pistachio Nuts at home
I find it easiest to buy pre-roasted and salted pistachio nuts that have been shelled. If you would like to do your own pistachio nuts at home, toss them in a little melted butter, sprinkle salt over them and mix them up and then spread them on a parchment-lined baking sheet. Bake them in a 350F oven for about 4 minutes, turn them with a spatula and bake for another couple of minutes. Pistachios burn very easily, so make sure you keep an eye on them. After roasting, allow them to cool and then chop them and use them in our sugar free pistachio ice cream recipe.
Store any unused nuts in a ziploc bag.
Substitutions for the Cream
If you are on a dairy-free diet or have a preference for soy or almond milk, feel free to substitute. Coconut Milk and Coconut Cream work well but do alter the flavour. Use the same measurements.
