It’s not a secret that we like sugar free cheesecakes. I often make different variations of cheesecakes but I think having a good recipe for a Sugar-Free Low Carb Cheesecake is important. You can add whatever toppings or sauce you want or make a sugar-free toppings bar and let your guests customize their own dessert

How to Make a Classic Low Carb Cheesecake

The Crust

1 – Preheat the oven to 350 degrees F. For dark-coloured pans reduce the temp to 300F (150C)

2 – In a food processor or blender, pulse the Catalina Crunch cereal into crumbs.

3 – Add the softened butter and mix well.

4 – Press the crumb mixture into the bottom of a 9-inch springform pan.

6 – Set aside while you make the filling.

Filling

1 – In a large mixing bowl, beat the cream cheese until very smooth.

2 – Add the sweetener and the vanilla extract and mix well.

3 – Add the eggs one at a time. mixing well in between eggs. It helps to have room-temperature eggs to keep the cream cheese from getting lumpy. Mix until combined but don’t overmix.

4 – Grease the inside of the pan.

5 – Pour the batter over the crust and smooth out the top.

6 – Tap the pan on the counter to release any air bubbles

8 – Bake in the center of the oven for about 45-50 minutes or until the cheesecake is just set up. See FAQs for tips to prevent cracking.

Serving

This Low Carb Cheesecake tastes great on its own, but if you want to add a little something, some fresh fruit and some Walden Farms Syrup is the way to go.

Low-carb berries, such as strawberries, blueberries, raspberries and blackberries are great choices and allow you to remain low-carb and diabetic-friendly.

Crust

  • Preheat oven to  325 degrees F (165 degrees C).
  • Add the Catalina Crunch cereal to a food processor and pulse into fine crumbs.
  • Add the melted butter and pulse until well mixed.
  • Press into a 9 inch springform pan.

Filling

  • In a large mixing bowl, beat the cream cheese until smooth.
  • Add the sweetener and vanilla and mix well.
  • Add the eggs, one at a time while mxing on low speed.
  • Pour the filling over the crust.
  • Bake in the center of your oven for approximately 45 minutes or until just set.
  • Remove from the oven and allow to cool for about 15-20 minutes on a wiore rack.
  • Run a knife around the inside edge of the cake and then release the latch on the springform pan.
  • Allow to cool for another 30 minutes and then remove the sides of the pan.
  • Refrigerate at least 3-4 hours before serving.

Substitutions

Catalina Crunch Cereal

If you would like to substitute the Catalina Crunch Cereal, Almond flour is a good option. It is low-carb and makes a good crust. Add some sweetener to the crust mixture as Almond Flour has a slight bitterness to it. Check out our Almond Crust recipe.

Sweetener

I use Splenda granulated whenever possible as it does not negatively impact my blood sugar. I find that sweeteners that contain sugar alcohols cause my blood sugar to rise. If this is not a concern for you or you have a preferred sweetener, by all means, make substitutions that suit your preferences and dietary needs. Keep in mind that substituting the sweetener may change the overall nutritional information.

Eggs

Eggs are a must in this recipe. Do not use egg substitutes.

Cream Cheese

For best results don’t substitute all of the cream cheese. A good alternative to replace some of the cream cheese with mascarpone cheese. Substitute 8 to 12 ounces. I have only tried substituting all of the cream cheese and it did not turn out great.

Tips to Prevent Cracking

Cracking on the top of your cheesecake can be frustrating, but there are a few tips to help prevent it.

1 – Use room temperature ingredients. this helps make a nice smooth batter.

2 – Do not overbake! When cheesecake is overbaked, it dries out causing cracks. Place the cheesecake in the center of the oven, not too close top the top.

3 – Grease the sides of the pan. Even though the pan may be nonstick, as the cake cools and contracts it will pull away from the side. If anything sticks, even slightly a crack can occur

4 – Do not open the oven door. Opening the oven during baking can also cause cracks. It can cause temperature change. Avoid opening the door, if possible.

5 – Don’t overmix the batter. Overmixing adds air into the batter. Tap the sides of the pan 3 to 4 times on your counter before placing it in the oven to help release air bubbles.

6 – Bake in a water bath. Even though this cake can be cooked without a water bath, a sure way to prevent cracks is by using one. To make a water bath, just use a larger pan, wrap the cheesecake pan in foil and place it in the middle. Pour boiling water into the large and then bake as directed.

Hot to Fix a Cracked Top on a Cheesecake.

You can’t fix the crack, but you can cover it. Great options are Sugar-Free Chocolate Ganache or a thin layer of whipped topping. For serving, a dollop of whipped topping and fresh fruit are surefire ways to hide the crack.
