Substitutions

Catalina Crunch Alternatives

if you decide you would rather have a different crust in place of the Catalina crunch crust, you could opt for a diabetic-friendly almond flour crust. If you would prefer to use a regular graham cracker crust always keep in mind that, even though you replace the sugar with sweetener, the nutritional values will change and could be more carbs.

Ratio Coconut Almond Granola Cereal Alternatives

Ratio brand of keto cereals offers other alternatives to the coconut almond granola. Those would be good substitutes as they are still chunky like a crumble crust. You could also opt for using Catalina Crunch and make a gram cracker-like crust crumble by adding chopped pecans or almonds in place of the cereal. There are also other keto-friendly sugar-free granola that could also be a alternative. Always remember that changes in ingredients will change the nutritional information.

Sweetener Alternatives

As I mention, in many of my other recipes, I try to stick with Splenda brand sweetener as it does not adversely affect my blood sugar. Many people do not have that issue, but if you do, I don’t recommend substituting it. If it is not a concern of yours, feel free to switch to whatever brand of sweetener you prefer. You may have to alter the amounts and the nutritional values.

Using Frozen Strawberries

You can easily use strawberries that have been frozen in this recipe. Allow them to thaw completely before using. If there is a lot of liquid, drain some of it off before adding them to a saucepan with the Jello.

If your frozen strawberries were frozen whole, chop them before thawing.

Thickening the Strawberry Mixture

The fresher the strawberries are, the juicier they are. When making the strawberry layer if the sauce seems too juicy, you can add an envelope of unflavoured gelatin. You could also drain off some of the liquid (juice) before you add the Sugar-Free Strawberry Jello powder.

Storing and Freezing

Store your baked Sugar Free Strawberry Cheesecake Squares in the refrigerator in an airtight container or covered in plastic wrap for up to 4 days. After 3 days you will find they start to lose their crunchiness and can become soggy.

Freezing: When freezing you will get the best results by freezing them in the baking dish, once they have cooled to room temperature. Tightly cover with plastic wrap or aluminum foil. Freeze for up to one month. Allow to that to room temperature before serving.

Ingredients

Bottom Crust Layer

  • 1 ½ cups Catalina Crunch Honey Graham Cereal
  • 2 tbsp Splenda Granulated Sweetener
  • ¼cup +1 tbsp Butter – melted

Cheesecake layer

  • 16 ounces Cream Cheese – Low fat – Softened
  • ½ cup Splenda Granulated Sweetener
  • 1 large Egg
  • 1 tsp Vanilla Extract

Strawberry layer

  • 2 cuos fresh Strawberries – chopped
  • 1 pkg Sugar Free Strawberry Jello
  • 1 tsp Lemon Juice
  • 2 tbsp Splenda granulated Sweetener

Top Layer – Crumble

  • cup Ratio Keto Almond Coconut Granola
  • cup Almond Flour
  • 3 tbsps Walden Farms Strawberry Syrup (Zero Cal – Zero Carb)
  • 2 tbsp Butter – Melted

Instructions

Bottom Crust

  • Preheat oven to 350 °F (175 C)
  • Add Catalina Crunch cereal to a blender or food processor and pulse into crumbs.
  • Add Splenda and butter and pulse into a loose crumble.
  • Pour into an 8 inch square baking dish and pat down evenly.
  • Bake in the oven for 10 minutes.

Strawberry layer

  • Add chopped strawberries, lemon juice and sweetener to a medium sized saucepan.
  • When strawberries start to break down and the liquid begins to bubble, sprinkle the strawberry Jello over the berries and mix until thorough;y mixed.
  • Remove from heat, set aside and allow to cool completely until thickened. (see notes)

Cheesecake layer

  • In a large mixing bowl beat the cream cheese until smooth.
  • Add the vanilla extract and egg and continue to beat until combined.
  • Add the sweetener and continue to mix for another minute or until well mixed.
  • Spread evening over the crumb crust.

Top Crumb layer

  • In a mixing bowl, combine the granola, almond flour, Walden Farms syrup and melted butter.
  • Mix until you have a wet crumble.

Final assembly

  • If the strawberry mixture is cooled and thickened, spread it over the cheesecake layer.
  • Sprinkle the top crumb layer over the strawberry layer.
  • Bake in the oven for approximately 40 minutes. (350 °F. 175C)
  • Serve when cooled, (this will allow layers to set- approx 2 jours)
  • Store refrigerated.
