The Sugar Free Mississippi Mud Ingredients

Cataline Crunch keto Cereal – This cereal is ideal for making a copycat graham cracker crust recipe. I have used other ingredients and this is by far the best substitution for graham cracker crumbs. If this cereal is unavailable The Catalina Keto Cinnamon Toast Crunch is a good substitute.

Butter – Butter is the binding agent that holds the crust together

Splenda Granulated Sweetener – We use a small amount of Splenda in the crust and more in the bottom cream cheese layer. The Splenda Granulated sweetener is an ideal diabetic replacement for sugar.

Low-fat Cream Cheese – A lower-in-calorie and lower-in-fat fat cream cheese. This is the primary ingredient for the bottom layer.

Vanilla Extract – Vanilla extract adds a smoothness to the flavour. This is especially helpful when using sweeteners. Sweeteners can add a touch of bitterness, and the vanilla extract will help remove the edge.

Sugar-Free Jello Pudding Mix – I use the Jello brand sugar-free pudding mix as it is readily available. It provides the rich chocolate flavour that is the main characteristic of our Sugar Free Mississippi Mud Pie recipe.

Skim Milk – Milk is required for the pudding layer. Using skim milk or fat-free milk will help reduce the overall fat content in the finished recipe.

Sugar-Free Cool Whip – The sugar-free cool whip adds the lightness that is necessary for a traditional-style Mississippi mud recipe. An alternative would be whipped Cream made with a small amount of sweetener.

If you cannot find Cataline keto Honey Graham cereal and want to keep your recipe low carb, feel free to use our Low Carb Almond Crust Recipe. The nutritional information will be different but it will be a better choice than using graham cracker crumbs.

Can I use a different sweetener?

As I frequently mention in many of my recipes, I use Splenda Granulated sweetener as it does not contain sugar alcohols. If you do not have any concerns about sugar alcohols, by all means, make substitutions to fit your preferences and tastes.

Can I use a different whipped topping?

If you are not able to get Sugar-Free Cool Whip, a suitable substitution is whipped cream, made from whipping cream without added sugar. You may want to add a little sweetener to the whipping cream, especially for the top layer. Making substitutions will alter the final nutritional values.

Can I use artificial Vanilla Extract instead of pure Vanilla extract?

Yes, you can. The addition of vanilla extract to this recipe helps to reduce the bitterness from other ingredients, such s cocoa powder or sweetener. Using an artificial vanilla extract is fine, but the best results are achieved with pure vanilla extract. Pure vanilla extract can be expensive, so using artificial extract will help keep the total cost in check.

Ingredients

Crust

First layer

  • 8 ounce Low Fat Cream Cheese – room temperature
  • 1 tsp Vanilla Extract
  • 1 cup Sugar Free Cool whip
  • cup Splenda Sweetener

Middle layer

  • 2 pkgs Jello Sugar Free Chocolate Pudding mix
  • 3 cups Skim Milk (Fat-Free)
  • 1 tsp Vanilla Extract

Top Layer

  • 1 cup Sugar Free Cool Whip Topping

Cocoa Sprinkle

Instructions

Crust

  • In a food processor, pulse the cereal until you have a crumb consistency.
  • Mix crumbs, sweetener and melted butter in a mixing bowl.
  • Press into the bottom of a 7 by 11 inch baking dish.
  • Chill.

First layer

  • Using an electric mixer, beat the cream cheese until it is smooth and there are no lumps.
  • Mix in the vanilla and then the Splenda and continue beating.
  • Fold in the Cool whip and mix well.
  • Spread evenly over the chilled crust.
  • Chill.

Middle Layer.

  • Place pudding mix, milk and vanilla into a mixing bowl and beat until you have a thick pudding.
  • Spread evenly over the first layer.
  • Chill overnight.

Top Layer

  • Spread cool whip over the chocolate layer.
  • Mix together Splenda and cocoa powder.
  • Using a small sieve or sugar shaker, sprinkle cocoa mix over the top.
  • Keep chilled until you are ready to serve.
  • Cut into 15 equal portions.
