When the sun’s blazing and you need something cool and refreshing, these Sugar-Free Low carb Strawberry Popsicles are the perfect treat! They’re fruity, tangy, and don’t contain. So you can indulge without any guilt. There is nothing like delicious sugar free popsicles on a hot day!

How to Make Low Carb Strawberry Popsicles
These low-carb strawberry popsicles are easy to make and very refreshing.
Start by washing your strawberries and removing the stems
Place the fresh berries into the blender and pulse until you have a strawberry purée.
Add the lemon juice, Jell-O powder, and water, and pulse for a few more seconds, just until blended.
Divide the mixture between 6 popsicle moulds.
Freeze for at least 4 hours or until frozen solid.
Store them in a large ziploc bag in the freezer for an easy grab-and-go snack, or wrap individually in plastic wrap and place in an airtight container if storing for a longer period.

A note about the Popsicle Moulds.
In this recipe, I am using 3-ounce silicone moulds with a silicone lid that have holes for the stick. They use wood or plastic sticks. To remove the popsicle, just push up from the bottom of the mould. The popsicles come out very easily when using the silicone moulds. If using alternative moulds, the size and quantity of popsicles made may vary.

- 2 1/2 Cups Fresh Strawberries
- 1 packet Sugar Free Strawberry Jello Packet (3 ounce)
- 1/4 Cup Water
- 1/4 tsp Lemon Juice
Instructions
- Wash and remove stems from the fresh strawberries.
- Pour strawberries into blender and pulse until you have a smooth puree.
- Add the water, lemon juice and jello powder and pulse unrtl well combined (a few seconds)
- Divide the mixture between 6 popsicle moulds.
- Insert sticks and place in the freezer for 4 hours or until frozen solid.
