How to Make Sugar Free Chocolate Chip Cookie Bars
Sifting the Flour
In many non sugar free recipes, sifting the flour is not required. I always sift King Arthur Keto Wheat Flour no matter what. Low-carb flours tend to be heavier and the sifting helps to lighten the flour up by adding a bit of air into it. Sifting also removes any clumps that may be in the flour. Use a sifter or a sieve to sift the flour.
Add the Baking Powder, Baking Soda and salt to the flour and mix it together I like to use a pastry blender or a whisk, but if you don’t have either, you can use a spoon.
The wet ingredients
Start with your butter at room temperature. This makes for a creamier dough and even distribution of the butter.
Cream the butter and then add the eggs, one at a time and continue mixing.
Next, add the vanilla, followed by the Splenda Granulated Sweetener and mix well.
Mixing it all together
Add the flour mixture a little at a time and mix well in between
Pour in the sugar-free chocolate chips and, mix them in with a spoon. Hold back about a tablespoon of the chocolate chips to spread onto the top before baking.
Spread the patt3r in the pan evenly and add the remaining sugar free chocolate chips to the top of the mixture.
Bake as directed and allow to cool and set up for 20 minutes before slicing!
Making Thin Bars
If you like a crunchy crisp bar, use a larger baking pan and bake them for about the same amount of time. Keep an eye on them, as the batter is thinner and can burn easily. Thin Bars can be used in place of Biscotti or as sandwich cookies for ice cream sandwiches. They are amazingly delicious.

- 3/4 cup Butter
- 2 med-lg Eggs
- 1 tsp Vanilla Extract
- 3/4 cup Splenda Granulated Sweetener
- 2 cups King Arthur Keto Wheat Flour (sifted)
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1 cup Sugar Free Chocolate Chips
Instructions
- Preheat oven to 350F (175C)
- Lightly grease an 8 by 8 inch baking dish.
- Sift the King Arthur Keto Flour.
- Whisk in the baking powder, baking soda and salt and set aside.
- Cream the butter with an electric mixer.
- Add one egg at a time, beating in between each egg.
- Add the vanilla extract and continue mixing.
- Mix in the sweetener and keep beating until well combined.
- Add the flour mixture a scoop or two at a time, mixing on low speed in between scoops.
- Add the sugar free chocolate chips and stir them into the batter. Reserve about a tablespoon of the chips to place on top. before baking.
- Press the dough evenly into the greased baking dish.
- Add the remaining chocolate chips, pressing them randomly into the top of the dough.
- Bake for 15-20 minutes until golden on top or until desired crispiness.

Storing and Freezing Instructions
These squares freeze beautifully. For best results freezing, cover squares with plastic wrap and then place in an airtight container. Freeze for up to 2 months. When thawing and serving, heat in the microwave for about 10 seconds. This softens the chocolate and makes the bars taste like they just came out of the oven.
Room Temperature Storage – Place in an airtight container and store at room temperature for 3 to 4 days.
