This easy recipe for low carb stuffed cucumbers can be modified by adding your favourite spices to the cream cheese filling. Add some of these to a charcuterie board or an appetizer buffet.

  • Cream Cheese
  • Crumbled Bacon
  • Garlic Salt
  • Parmesan Cheese

How to Make Low Carb Stuffed Cucumbers

1 – Wash the cucumbers and peel. Peel strips off of the sides if you are making standing. If you are making boat-style stuffed cucumbers, leave some peel on to keep your tray from getting too wet.

2 – If desired make curls from the skin that has been cut off. These make a nice topping and add a decorative flair.

3 – In a small mixing bowl, cream the cream cheese until it is smooth.

4 – Add the Garlic salt and continue mixing

5 – Stir in the crumbled bacon and the parmesan cheese.

Different Types of Cucumbers

Any cucumber will work in this recipe. If using English cucumber, slice them into 2-inch chunks and hollow out enough of the center to add the filling.

Gerkin size and very small picking size cucumbers do not work well, but most are easy to use.

Season the filling to suit your tastes. If you like a little heat, add some chilli powder and cayenne pepper. For a savory flavour a little rosemary and thyme. This recipe is great for adding different flavours.

Ingredients

  • 4 Cucumbers (Pickling size – 4 to 5 inches)
  • 4 ounces Cream Cheese (Low fat-softened)
  • 1/3 cup Bacon – Crumbles
  • 1/2 tsp Garlic Salt
  • pinch Salt
  • 1 tbsp Chives

Instructions

  • Wash and remove peel sections (if desired)
  • Using a melon baller, scoop out the seeds or center of the cucumber.
  • Set aside.

Filling

  • In a small mixing bowl, beat the cream cheese until smooth.
  • Add the garlic salt and continue beating.
  • Stir in the parmesan cheese and crumbled bacon and stir until well mixed.
  • Sprinkle salt into the cucumber.
  • Scoop the filling into the cucumbers – dividing between the 8 halves.
  • Sprinkle the filled cucumbers with fresh chopped or sprigs of chives.
  • Chill before serving.
