These Sugar Free Apple Muffins are awesome during apple season but delicious all year round. We love them for breakfast or mid-day coffee but add a drizzle of sugar free caramel sauce and you have a fantastic sugar free apple dessert.

- King Arthur Keto Wheat Flour
- Baking Powder
- Eggs
- Salt
- Butter
- Cinnamon (ground)
- Salt
- Milk
- Vanilla Extract

How to make Sugar Free Apple Muffins
Dry Ingredients
Sift the King Arthur Keto Wheat Flour. As I mention in many of my recipes, this is a very important sep. Low Carb Flour tends to be denser and this helps to add some air into the flour and lighten it up for better mixing.
Use a regular sifter or sieve.
Let the flour set aside while you mix the wet ingredients.
Wet Ingredients
In a large mixing bowl, cream the butter. This only takes a few seconds if the butter is at room temperature.
Add the sweetener and mix.
Add the eggs, one a a time, mixing in between eggs.
Lastly, add the vanilla extract and mix.
Mixing it all together
Add the baking powder, cinnamon and salt to the flour and whisk it, just enough to mix it.
Scoop and couple of scoops of the flour mixture into the butter mixture. Beat in low speed,
Add some of the milk and continue mixing.
Alternate the flour with the milk until it is well mixed.
Bake
Divide the batter between 12 lined muffin tins. *Lining using paper muffin liners is optional, but makes cleanup and serving much easier.
Place a couple of pieces of chopped apple on the top of the batter on each muffin.
Bake for 18 to 20 minutes in a 350F oven.
When done, the muffins should be golden brown. To check for doneness, stick a toothpick into the center of the muffin, and if it comes out clean, they are fully baked. If the toothpick comes out with batter stuck to it, bake for a few more minutes.
Once baked, Remove the muffins from the baking tray and cool on a wire rack for at least 10-15 minutes before serving.
Soring and Freezing
These muffins freeze exceptionally well. Place in an airtight container or large Ziploc bag and freeze for up to 2 months. make sure the muffins are fully cooled before freezing.
Store at room temperature for up to 3 days or in the refrigerator for up to 5 days.
Sugar Free Apple Muffins

- 2 large Eggs
- 1/2 cup Butter – softened
- 2/3 cup Splenda Granulated Sweetener
- 1 tsp Vanilla extract
- 1 3/4 cups King Arthur Keto Wheat Flour
- 2 1/2 tsp Baking Powder
- 1/2 tsp Cinnamon – Ground
- 1/2 tsp Salt
- 1 cup Skim Milk (fat free)
- 1 1/2 cups Apples – peeled and chopped
Instructions
- Sift the flour into a bowl and set aside.
- Preheat oven to 350 F (176 C)
- In a mixing bowl, cream the butter until smooth.
- Add the sweetener, and then eggs (one at a time) and vanilla extract. Mix well.
- Add the baking powder, cinnamon and salt to the flour and whisk.
- Add the flour and the milk to the creamed butter mixture, alternating a couple of scoops of flour followed by the milk and repeat until both the flour and milk are well mixed.
- Add the chopped apples and stir into the batter. *Reserve a few pieces of apple to top the muffins with, if desired.
- Divide the batter between 12 muffin tins. (line with paper liners for less mess)
- Top each muffin with a piece or two of the remaining chopped apple.
- Bake in the oven for 18-20 mins or until golden. A toothpick should come out clean when inserted, indicating that they are fully baked.
- Once baked, remove from the pan and allow to cool on a wire cooling rack.
