But if you’re following a low-carb or diabetic-friendly lifestyle, traditional stuffing can be off the menu. But you don’t have to miss out! With a few simple swaps, you can enjoy a flavorful low carb turkey stuffing made with low-carb bread that tastes every bit as satisfying as the classic version.

In this recipe, I am using our own homemade low carb Bread. You can use your favourite low-carb bread, but keep in mind the card and nutritional information will change.

Ingredients

  • 8 cups Low Carb Bread – cubed (1 low carb loaf approx)
  • 1 1/2 tbsp Butter
  • 3/4 cup Celery – chopped
  • 3/4 cup Onion – Chopped
  • 1/2 cup Carrot – Shredded
  • 1 tsp Poultry Seasoning
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 3/4 cup Chicken Broth

Instructions

  • Melt the butter in a saute pan.
  • Add the shredded carrot, onion and celery and cook until tender (not brown)
  • Remove the pan from the heat and add the poultry seasoning, salt and pepper, and mix well.
  • In a large mixing bowl, add the bread cubes.
  • Sir in the cooked vegetable mixture and stir well.
  • Drizzle with the chicken broth to moisten and toss lightly.
  • Stuff one 10-12 pound turkey.

Notes

One Low Carb Loaf yields approximately 8 to 10 cups of cubed bread. 
 
This recipe makes enough stuffing for a 10-12 pound turkey.

Any good quality low-carb bread will work, but keep in mind, any substitutions you make will alter the. utritional informantkion. Store-bought keto bread is very light and requires more bread.

Compare the low-carb bread you buy with our homemade bread, and it will give a rough idea of the carb content.

Add Ins

If you like to add in more ingredients such as fresh chopped cranberries, chopped apple, crumbled bacon, nuts or sausage, just make sure to recalculate the nutritional information along with the original recipe.

Baking Low Carb Turkey Stuffing on its own

To bake this stuffing without a turkey, add extra broth to get the mixture wet enough to stick together. Bake in a covered casserole dish at 350°F for about 45 minutes. Add more broth if the mixture is dry.

For portion control, bake the stuffing in ramekins or small dishes. This is especially helpful when serving anyone who may struggle with figuring out carbs and portions. Just divide the stuffing into oven-safe dishes and bake. Its easy and eliminates the guesswork.

Dealing with Dry Stuffing
