In this easy recipe, we use our Sugar Free Fruit Caviar. They are really easy to make and can be made in any colour you want. In that recipe, I am using Jordan’s Skinny Dark Cherry syrup with a little black food colouring. These are perfect for the sugar free spider egg pudding.

Special Equipment

Nothing special is needed for this recipe but you will need a candy dropper or small squeeze bottle and mesh screen when making the fruit caviar.

For serving, a clear desert glass with straight sides works best. This allows you to see the spider egg pounding from the outside of the glass.

How to Make Sugar Free Spider Egg Pudding

Make the Sugar Free Fruit Caviar ahead of time if possible. Store it in the refrigerator while you make the pudding. If you did not have time to make the caviar, make it before you start on the pudding.

1 – Follow the instructions on the sugar-free pudding mix and go ahead and make the pudding.

2 – Rinse the fruit caviar under cold water and gently pat the caviar with a paper towel to remove any excess water or oil residue.

3 – Mix some of the fruit caviar (keep some for topping) into the pudding and divide it between the dessert bowls.

4 – Smooth out the top of the pudding and divide the remaining pearls of fruit caviar between the portions.

5 – Serve

  • In a mixing bowl add the cold milk and pudding powder.
  • Beat at high speed for about 2 minutes until the pudding is thickening.
  • Add green food colouring if you want a brighter green colour.
  • Place in the refrigerator and allow the pudding to set up and thicken.
  • Once thickened, add some fruit caviar to the mixture. (save about half to use when adding to the dishes)
  • Add some caviar to each dessert dish, placing them around the bottom edge against the glass.
  • Divide the pudding between the bowls.
  • Top each pudding with the remaining fruit caviar.
  • Serve.
