Substitutions

Keto Honey Graham Cereal – The Catalina Honey Graham Crunch Cereal is the perfect replacement for traditional graham cracker crumbs. If you prefer to use a Sugar-Free Almond Flour crust, it works well with this recipe. If you use a Sugar-Free Almond Flour crust, you may want to add a bit of extra sweetener to the crust. The Catalina Crunch cereal is sweet on its own, so adding a little extra sweetener will compensate for the substitution.

Sweetener

I use Splenda granulated whenever possible as it does not negatively impact my blood sugar. I find that sweeteners that contain sugar alcohols cause my blood sugar to rise. If this is not a concern for you or you have a preferred sweetener, by all means, make substitutions that suit your preferences and dietary needs. Keep in mind that substituting the sweetener may change the overall nutritional information.

Sugar Free Cool Whip

If you prefer, you can easily use fresh whipped cream, sweetened with Splenda or another sugar-free sweetener. This will alter the overall nutritional information slightly.

Butter – You can easily substitute the butter with Canola Oil or coconut oil. Both work well in the crust. I don’t recommend using olive oil or other oils that have a strong flavour.

Lime Jello – If you would like to make this sugar free layered jello dessert but don’t like the lime flavour, you can easily use any flavour of Sugar Free Jello. It will not be green for St. Patrick’s Day, however, it is great year-round in any other jello flavour.

Storing and Freezing

Store refrigerated in an airtight container for up to 3 – 4 days. Be aware that the dessert starts to separate and get watery after 3 days.

Freezing is not recommended for this recipe.

Ingredients

Crust

Layer 1

Layer 2 – Jello Layer

  • 1 6 ounce (large) box Sugar Free Lime Jello
  • 1 3/4 cups boiling Water
  • 20 ounce can Unsweetened Crushed pineapple – drained

Topping

  • 1 cup Sugar Free Cool Whip topping
  • Lime Zest

Instructions

Crust

  • Pulse Catalina Crunch cereal in a food processor or blender into fine crumbs.
  • Add melted butter and sweetener and mix well.
  • Pour and spread in a 9 inch square springform pan and press into the bottom.
  • Bake in the oven for 8-10 mins.
  • Let cool.

Layer 1

  • Beat the cream cheese until creamy and smooth.
  • Add sweetener and food colouring and mix well.
  • Fold in the cool whip.
  • Spread evenly over cooled crust.
  • Chill.

Layer 2 – Jello Layer

  • Dissolve the Sugar-Free Lime Jello in the boiling water.
  • Stir in the drained pineapple.
  • Spread evenly over the cream cheese mixture.
  • Chill for 2 hours or until jello layer is set.
  • Spread cool whip over the top.
  • Sprinkle lime zest over the top.
  • Chill before serving.
