This easy to make Sugar Free Lemon Sorbet recipe is perfect all by itself or added to your favourite diabetic dessert on the side. Of all the SugarFree Sorbets I have made, I think this lemon one is the easiest.
I believe that this is the best Sugar Free Lemon Sorbet there is! It has a strong and tangy lemon flavour, a beautiful yellow colour and is super low in calories and carbs. If you like lemon sorbet but don’t want a strong lemon taste, check out our tips below to tame the flavour.
How to Make Sugar Free Lemon Sorbet
Ingredients List
- Fresh Lemons – 4 or 5 med-large
- Water
- Jordan’s Skinny Simple Syrup
- Sugar Free Lemon Jello Powder
In this recipe, we use a 2-quart Cuisinart Ice Cream maker. I recommend using an ice cream or sorbet maker for the best results. If you don’t have one but still want to make this recipe, instructions are provided below.
Expert Tips for the Best Sugar Free Lemon Sorbet
Temperature is important!
When using an ice cream maker like the Cuisinart Pure Indulgence, make sure the ingredients are cold before adding them to the frozen freezer bowl. I made this mistake too many times to count. If it is possible, make your liquid up the day before, and let it chill overnight.
The biggest indicator that the ingredients are not cold enough is a buildup of ice on the inner wall of the freezer bowl. The buildup will get thick and cause the churning to stop. If it goes too long, the paddle will freeze into the container, which is a nightmare to remove.
Can I use Bottled Lemon Juice?
For the best results use the juice from freshly squeezed lemons. The flavour from bottled lemon juice does not produce the best sorbet. It can be used but I don’t recommend it.
Alternatives to Jordan’s Skinny Simple Syrup
If you want to make sugar free simple syrup, you will need to do it far enough in advance for it to chill before using.
To make the sugar free simple syrup mix one cup of water with 1 cup of Splenda Granulated sweetener (or sweetener of your choice) together. Bring it to a boil and then remove it from the heat. Store in a jar or airtight container in the refrigerator.
How to Make this recipe without an Ice Cream/Sorbet Maker
Mix the ingredients as stated in the recipe.
Pour the mixture into an airtight ice cream container or similar container and place it in the freezer. In approximately 1 hour, give it a good stirring and then every hour after that until it thickens up.
Best Ice Cream Container for Making Homemade Sorbet – When choosing an ice cream container, choose a long shallow one, instead of a bucket style. As the sorbet begins to thicken and freeze, stirring is easier in the long shallow style. When thawing to serve the long shallow style thaws more consistently than the bucket style which remains hard in the middle.
Storing Instructions
For best results, place a layer of plastic wrap onto the surface of the sorbet and then place the lid on. This method limits the air exposure to the top of the sorbet, which can cause it to dry out or get sticky. Store in the freezer, well covered for up to one month.
Thawing to Serve.
The time to that will vary depending on the type of container you use and the temperature of the freezer. Typically 10 to 15 minutes before serving is adequate to make the sorbet scoopable.
How to Make Sugar Free Lemon Sorbet
Freeze your freezer bowl according to the machine instructions
Prepare the ingtredients
- Zest the lemons
- Squeeze the lemons to make 3/4 cup of fresh juice.
- Measure the water
Whisk all of the recipe ingredients together and chill thoroughly. The mixture needs to be cold before adding them to the freezer bowl.
Assemble your Ice Cream maker
Add the cold ingredients.
Churn until the mixture is the consistency of sorbet. ( usually 20-25 minutes)
Scoop and Serve or pour into a freezer container and free.
If you are freezing, remove it from the freezer at least 1/2 hours before serving as the sorbet freezes hard.

- Cuisinart 2 qt Ice Cream Maker
Ingredients
- 3/4 cup Lemon juice – freshly squeezed *About 4 lemons
- 1 pkg Sugar Free Lemon Jello Powder
- 1 tbsp Lemon Zest
- 1 1/2 cups Cold Water
- 1/2 Cup Jordan's Skinny Simple Syrup
Instructions
- In a large mixing bowl or pitcher, mix all of the ingredients.
- Whisk very well, until combined.
- The ingredient mixture must be cold. Chill for 12 to 24 hours if possible.
- Remove the ingredient mixture from the refrigerator when cold.
- Start your ice cream maker.
- Add ingredients while churning.
- When fully thickened, scoop and serve or fill a freezer container and freeze.
