Tips to prevent homemade ice cream from getting too hard.

Sugar Free Ice Cream (made at home) is often harder than homemade regular ice cream due to the lack of sugar. Sugar molecules interfere with the formation of ice and help to lower the freezing point, which keeps it scoopable and soft.

Adding a teaspoon or two of vodka to your ice cream recipe can help lower the freezing point, but I have had mixed results with it, so I did not include it in this recipe.

Gelatin or Guar Gum or Xanthan Gum acts as a stabilizer in homemade ice cream, which also helps to prevent ice crystals from forming. I often use Jello powders in my ice cream recipes for this reason, as well as the extra flavour benefit.

There is no guarantee that your ice cream will be soft even when adding extra ingredients. Sometimes the ice cream I make is perfect, other times it freezes hard and takes half an hour to thaw. Allow yourself extra thawing time, if necessary.

Using Vanilla Bean Powder

Vanilla is a component of vanilla extract. I have used it in this recipe so I get a good bold vanilla taste when using it with the vanilla extract. If you prefer you can double up on the vanilla extract and omit the vanilla powder. Vanillinpor vanilla bean powder can usually be found in the baking raise of your supermarket.

Approximately 1/2 tsp of Vanilla Bean powder is equivalent to the insides of one vanilla bean. (can vary by brand)

Substitutions and Additions

Sweetener

I use Splenda granulated whenever possible as it does not negatively impact my blood sugar. I find that sweeteners that contain sugar alcohols cause my blood sugar to rise. If this is not a concern for you or you have a preferred sweetener, by all means, make substitutions that suit your preferences and dietary needs. Keep in mind that substituting the sweetener may change the overall nutritional information.

Adding extras

After the ice cream has churned and started to thicken up, it is a good time to add any flavourings or toppings you’d like mixed into the ice cream.

Making Sugar Free Vanilla Ice Cream without an Ice Cram Maker

You can still make this recipe if you don’t have an ice cream maker. Mix the ingredients and whisk vigorously or place ingredients into a blender and mix well. Pour the mixture into an airtight container and place in the freeΩer. Give it a good stirring every 20 minutes to half an hour until it becomes too thick to stir.

Whgen serving, allow 20 minutes to half an hour for thawing.

Freezing Instructions

Freeze in an airtight container in the freezer for up to 2 months. For best results, place plastic wrap over the surface of the ice cream and then place the lid on the container. This helps prevent ice crystals from forming on the surface of the ice cream.

Ingredients

Instructions

  • Freeze the freezer bowl of your ice cream maker according to the manufacturer's instructions.
  • Combine half and half, vanillin powder, salt and sweetener in a mixing bowl and whisk until the sweetener is dissolved.
  • Mix in the remaining ingredients and whisk.
  • Chill covered for at least 2 hours, preferably overnight.
  • Place the freezer bowl into the ice cream maker machine and insert the mixing paddle.
  • Turn the machine on and pour into the freezer bowl.
  • Churn for about 30 minutes or until the ice cream had a creamy thick consistency.
  • Scoop and serve.
  • * For a harder consistency, scoop into an ice cream container and freeze for up to 2 hours. *
