Substitutions
Sweeteners
I always (when possible) use Splenda granulated Sweetener as it does not impact my blood sugar. Using sweeteners that contain sugar alcohols impact my blood sugar negatively. I am told that this is not an issue for most diabetics, but to avoid any possible issues and remain diabetic-friendly, I use Splenda. If you choose to switch to a different sweetener, be mindful of the impact of other sweeteners, especially if you aren’t sure if it can raise your blood sugar or have never used it before.
Alternate Flour
King Arthur keto Wheat Flour is an excellent low-carb substitute for all-purpose flour. If you need to find an alternative you can use Carbnalose Flour. If using Carbalose flour, be sure not to skip the sifting, this is very important in the overall recipe. Carbalose Flour will require extra liquid ingredients, such as egg whites.

Yogurt
Yogurt provides extra moisture and flavour. I am using plain all-natural unsweetened yogurt. You can substitute it with a sugar-free Greek yogurt if you prefer or a sugar-free yogurt of your choice.
Keto Almond Cranberry Crunch Cereal
This low carn cereal is perfect for the crunchy crumble topping used on our Sugar Free Strawberry Cream Cheese Muffins. Adding the crumble topping not only adds great flavour but makes your muffins a great dessert or coffee break treat. You can choose to bake the muffins without the crumble topping if desired.
Can I turn this recipe into a Cake?
NOTE: Any alteration to serving sizes and ingredients will alter the nutritional information.
Yes, you can, but the cake may be quite dense. You will need to extend the baking time considerably. Insert a toothpick into the center of the cake. When it comes out clean, remove it from the oven. Drizzle some sugar-free drizzle icing over the top.
Storing Instructions
These muffins should be stored in an airtight container at room temperature for a couple of days. To keep longer, store refrigerated for up to 5 days.
Freezing: These muffins can be frozen in n airtight container for up to one month. For best results, wrap each muffin in plastic wrap before placing it in a container.
When serving, pop a muffin in the microwave for a few seconds to take the chill off, as they are best served warm.

Diabetic Sugar Free Strawberry Cream Cheese Muffins
Ingredients
Muffin Batter
- 1 ½ cups King Arthur Keto Wheat Flour – sifted
- 2 ¼ tsps Baking Powder
- ½ tsp Salt
- ½ cup Butter – room temperature/softened
- ½ tsp Vanilla Extract
- ½ cup Splenda Granulated Sweetener
- 1 cup Strawberries – Chopped
- 1 large Egg
- ¾ cup Plain Unsweetened Yogurt – All Natural
Cream Cheese Filling
- 6 ounces Cream Cheese – Low fat -softened
- 1 tbsp Splenda Liquid Sweetener
- ¼ cup Strawberries – chopped
- 1 tbsp Walden Farms Zero Cal-Zero Carb Strawberry Syrup
Streusel Topping
Strawberry Glaze (Optional)
Instructions
- Preheat oven to (190 C) 375 °F
- Whisk together, the flour, salt and baking powder and set aside.
- In a large mixing bowl, cream the butter.
- Add the egg followed by the vanilla extract and sweetener and continue mixing.
- Add the yogurt and continue mixing until well combined.
- Slowly add the dry ingredients, mixing well in between additions.
- Stir in 1 cup of chopped strawberries to the batter.
Cream Cheese Filling
- In a separate mixing bowl, cream the cream cheese.
- Add the sweetener and the Walden Farms Syrup and mix well.
- Stir in the 1/4 cup of chopped strawberries.
Crumble Topping
- In a mixing bowl, combine the cereal, pecan flour and Walden Farms syrup.
- Mix well.
Assemble and bake
- Line your muffin trays with paper liners.
- Add a scoop of batter mix (approx 2 tbsp) per liner.
- Add a spoonful of the cream cheese filling on top of the batter.
- Top off each muffin with more of the batter, covering the cream cheese filling.
- Add a scoop of crumble topping to the top of each muffin. (dividing between the muffins)
- Bake for approximately 25 to 30 minutes
- Remove from oven and allow to cool before glazing.
Glaze
- In a small bowl, whisk together the sweetener and Walden Farms syrup until you have a creamy thick glaze.
- When cooled, drizzle glaze over each muffin.
- Enjoy!
