These easy-to-make Sugar Free Peach Crumble Bars taste amazing! I made this recipe as soon as fresh juicy peaches were available, but it can be made year-round with store-bought peaches. In our recipe notes, we tell you how to deal with less flavourful peaches off-season.

How to Make Sugar Free Peach Crumble Bars

The Crust

Sift the King Arthur Keto Wheat Flour. KA keto flour is denser than regular all-purpose flour. I find that sifting helps to ensure no lumps and helps in the mixing.

Whisk the dry ingredients together.

Using a pastry blender, add the butter and the Jordan’s Skinny Peach Syrup and mix well. You can use a fork as well or a dough hook on an electric mixer, however, the best results are achieved with a pastry blender.

Press the dough into the bottom of a greased 8-inch square springform pan. (You can also line the bottom of the pan with parchment if desired.)

Bake the crust in a 375F oven for 8 to 10 minutes.

Allow the crust to cool.

The Filling

Peel and dice the peaches. (Tips for super simple easy peeling are listed below.)

Pour the peaches into a mixing bowl.

Stir in the lemon juice. The lemon juice helps to maintain a nice peach colour in your finished bars.

Sprinkle the sweetener over the peaches and stir it in.

Sprinkle the KA flour over the peach mixture and stir well. Make sure there are no lumps.

Sprinkle the gelatin over the mixture and mix it well.

Spread the filling over the crust.

The Topping

In a food processor or blender, pulse the Ratio Keto Granola for a few seconds. A few seconds is all you need. Just enough to break it up into a crumble.

Pour the granola crumble into a mixing bowl.

Add the sweetener and rolled oats and mix well.

Pour the Walden Farms syrup over the mix and stir well, making a slightly wet crumble.

Spoon the crumble over the peach layer and lightly press it into the peaches.

Bake

Bake in the oven for 30 to 35 minutes. you should see the peach mixture bubbling and the top should be golden in colour

Allow at least 30 minutes cooling time after baking before serving, to allow the bars to firm up.

These are great served with a dollop of sugar free whipped topping or a scoop of sugar free vanilla ice cream.

Instructions

  • Preheat the oven to 375F (190C)
  • Using a pastry blender, mix the crust ingredients in a small mixing bowl.
  • Grease the sides of an 8 inch springform pan and line with parchment paper.
  • Press the crust into the bottom of the pan.
  • Bake for 10 minutes.

Filling

  • Pout the diced peaches into a large mixing bowl, sprinkle with the lemon juice and stir to coat.
  • Sprinkle the sweetener over the peaches and stir.
  • Sprinkle the KA flour over the mix and stir well, making sure there are no lumps.
  • Sprinkle the gelatin over the mix and stir again, making sure there are no clumps of gelatin.
  • Pour the mixture over the baked crust and spread evenly.

Topping

  • In a blender or food processor, pulse the keto granola for a few seconds to break up the pieces.
  • Pour cereal into a mixing bowl and add oats, and sweetener and stir.
  • Add the Walden Farms Pancake Syrup to the cereal mixture and mix well.
  • Pour the mixture over the peach filling layer, spread it evenly and press it slightly into the peaches.
  • Bake for 40-35 minutes. (You should see the filling bubbling around the edges.
  • Remove from the oven and allow to cool slightly before serving.

Notes

** When using peaches off season, the flavour may not be a peachy as it is during the peach season. Replace the unflavoured gelatin with a packet of Sugar Free Peach Jello. This is agreat way to get the best flavour possible.
If Sugar Free Peach Jello is not avaiable to you, use one tablespoon of sugar free Jordan Skinny Peach Bellini Syrup in the filling.

Tips for Success and FAQs

Getting full peach flavour when using store-bought out-of-season fruit

When peaches are in season, you get the best flavour. When using off-season fruit there is a couple of quick and easy tips for getting a full-bodied flavour. My favourite tip is to use sugar-free jello powder. It is carb and calorie free and the flavour is great. Sugar-Free Peach Jello is ideal to add in place of the unflavored gelatin. It is hard to find in Canada, so another great option is Peach Extract. It is available in some grocery stores, at Michaels or online. Use about 1/2 of a regular-strength peach extract in the filling layer.

Sifting the flour

Low Carb and Keto flours are often denser than all-purpose flour. For this reason, I always sift the flour. Sifting helps to get rid of any lumps and helps to add a little air making it mix better. Measure the flour first and then sift.

Peeling Peaches

For easy peeling, bring a small saucepan with enough water to cover your peaches to a boil.

Use a slotted spoon and place the peaches into the boiling water.

Leave them in the water for about 30-60 seconds

Fill a bowl with cold water with ice added to it.

Remove them from the water with the slotted spoon and plunge them into a bowl of ice water.

After a few seconds remove each one from the ice water and the skin should slide off.

** This does not work well if the peaches are not ripe enough. Use ripe peaches for the best result.

Sweetener Substitutions

I use Splenda granulated whenever possible as it does not negatively impact my blood sugar. I find that sweeteners that contain sugar alcohols cause my blood sugar to rise. If this is not a concern for you or you have a preferred sweetener, by all means, make substitutions that suit your preferences and dietary needs. Keep in mind that substituting the sweetener may change the overall nutritional information.

Using Frozen Peaches

If using frozen peaches, allow them to completely thaw and strain off any liquid.

Using store-bought peaches during the off-season – I have found that when I purchased fruit during the off-season the flavour is not as full, bodied and strong as when the fruit is freshly picked, and during the season. To make sure you get a full peachy flavour in your sugar-free peach crumble bars there are a couple of Products you can add to bump up the flavour. Jordan’s skinny peach Balenie syrup is a great option. Add 1 tablespoon when making the peach feeling. Alternatively, you could use a sugar-free peach Jell-O packet in place of the unflavoured gelatin to the filling mix. I know that not every country has sugar-free peach Jello available to them, but there are Sugar-free peach syrups that are available in most counties.

Keto Granola Substitutions

In this recipe, I use Ratio Keto Toasted Almond Granola, but there are several good quality Keto-friendly Granolas that are good alternatives. In Canada FarmGirl Brand Keto Granola is a great option, but it is not available in the USA at the time of this writing). Lakanto makes a good quality keto granola as well, which is a good substitute.

Keep in mind when making substitutions, the nutritional information will change and carbs could increase.

Storing and Freezing Instructions

Store refrigerated in an airtight container for up to four days. If storing in the pan it was baked in, cover with plastic wrap and refrigerate.

Freezing – Freeze in an airtight container or tightly covered in plastic wrap for up to one month. Before serving, reheat in the microwave or in the oven for a few minutes at a low temperature.
