You can call them sugar-free lemon cream cheese bites or sugar-free lemon cream cheese truffles or you can just call them delicious. I call them sugar-free lemon cream cheese bites because they are the perfect melt-in-your-mouth bite-size snack.

Diabetic Friendly Sugar Free Lemon Bites

Just like our sugar-free Lemon Squares and our Sugar-Free lemonade slushies, they are diabetic-friendly and low-carb. There are no strange ingredients in this recipe, most things you will already find in your diabetic-friendly pantry.

These go perfectly with a hot cup of coffee or tea. they have just the right amount of tartness to give them a little kick but are sweet enough to make you feel like you cheated on your diabetic diet.

This is a NO-BAKE recipe, which I always find is a bonus. Of course, that means, fewer dishes and pans to clean up.

Ingredients

  • 8 oz cream cheese- softened
  • 1 Tbsp lemon zest
  • 1/2 tsp lemon extract
  • 1/4 cup finely chopped walnuts
  • 1/4 cup shredded, unsweetened coconut
  • 1 tsp liquid Stevia.

Instructions

  • In a medium sized mixing bowl, beat the cream cheese until smooth.
  • Add the lemon extract, sweetener and lemon zest, and continue beating until well mixed.
  • Add 1 Tbsp of the finely chopped walnuts and 1 Tbsp of the shredded coconut and stir until thoroughly combined.
  • Form into 1 inch balls
  • In 2 small separate bowls add the remaining finely chopped walnuts. and the shredded coconut.
  • Roll the balls in the coconut or walnuts and set them aside.
  • Chill for at least 2 hours before serving.
  • Store in refrigerator in an airtight container.

Zesting the lemon

A lot of the flavour comes from the lemon zest. When zesting, only remove the skin,. do not go into the white pith of the lemon. This part of the lemon is bitter and can add a bitter flavour to your lemon squares or other recipes.

If you like the lemon flavour to be stronger, feel free to add more zest. Do not add extra extract, as this will result in a bitter flavour.

The easy way to make uniform-sized Sugar-Free Lemon Cream Cheese Bites

The easiest way to make uniform-sized balls is to use a cookie scoop. Cookie scoops are smaller than ice cream scoops and are perfect for keeping them all the same size. If you don’t have one, you can use a rounded tablespoon measuring spoon.

Alternative flavour options

You can replace the lemon zest and extract with other flavours and/or replace the nuts with an alternative. Here are some of our ideas for substitutions.

  • Crush 2 sugar-free Werthers hard candies and use them in place of the nuts
  • Use finely chopped pecans in place of walnuts
  • Use orange zest and orange extract instead of the lemon
  • Use 2 tbsp of lime zest instead of the lemon zest and lemon extract.
  • Use sugar-free Werther’s caramel candies and chopped pecans for a caramel pecan bite
  • replace the lemon zest and extract with finely chopped strawberries and sugar-free Walden Farms strawberry syrup.
